7-Color Cuisine for Kids

The 7-Color Cuisine-Kids Club was initiated in Chico area schools in 2006. The project teaches children to select foods because of their color and use portion control to balance meals. The color of foods that we see are pigments belonging to a specific a class of phytonutrients with health promoting benefits. It is important to eat all seven colors each day to reap the benefits of this amazing group of plant chemicals. The program is based on my book 7-Color Cuisine and has children shopping, preparing food, and sharing their recipe “inventions.” The program is applicable for classroom instruction, during after school activities, and home instruction. Children are intrigued by learning to “eat a rainbow” every day.
