Eat Your Colors

The idea that you can improve your health and avoid many chronic conditions simply by eating your colors was something Marcia began espousing in the late 1980’s. It turns out that the pigments in foods represent a health promoting class of nutrients known as phytochemicals. Since that time, scientific research has confirmed that eating a colorful diet confers diverse health benefits and helps prevent disease.

We hear or read almost daily about some phytochemical that has important health benefits. Some recent examples you may have heard about are lutein and zeaxanthin which are found in green leafy vegetables and help protect against age-related macular degeneration. Resveratrol, a component of red wine has gained attention because of its heart protective benefits.
